The Rain (Supa Dupa Fly), is an original cocktail created for our Cellar Bar menu, 50 Years of Hip Hop. The drink takes its inspiration from the modern classic and industry favourite, The Paper Plane. This drink follows the classic equal parts formula made famous by drinks like the Last Word and Corpse Reviver No.2 consisting of a base spirit, citrus and two modifiers. The Rain (Supa Dupa Fly) is made using Axia Mastiha, a traditional botanical greek spirit, mixed with Select Aperitivo, Amaro Montenegro and Lemon Juice.
Chill a Martini glass or coupette in the freezer or by filling with ice
Using your jigger to measure, add all ingredients to your Boston glass or shaker
Fill with cubed ice and seal
Shake vigorously for 10 – 15 seconds
Remove your glass from the freezer or empty of ice
Using your Hawthorn strainer, strain your drink into your chilled glass
Garnish with a lemon twist
Serve and enjoy!

This drink was created for our Cellar Bar menu 50 Years of Hip Hop, for which we took inspiration from some of our favourite tracks from half a century of this iconic genre. The Rain (Supa Dupa Fly) is named after the 1997 hit by Missy Elliot featuring an iconic Ann Peebles sample.
Playing off the ‘Fly’ motif of the song, we modelled this cocktail after a Paper Plane, a modern classic and industry favourite which usually features bourbon, Aperol, amaro and lemon. In place of bourbon we chose to use Axia Mastiha, a traditional greek spirit distilled from the sap of the mastic tree and in place of Aperol we’ve gone with the original Venetian Aperitivo; Select.
