The Paper Plane is a modern Classic and an industry favourite created in 2008, It’s a carefully balanced sour featuring bourbon Italian aperitivo, amaro and lemon juice in equal parts.
Chill a martini glass or coupette in the freezer or by filling it with ice.
Using your jigger to measure, add your bourbon, Select Aperitivo and Montenegro Amaro to your Boston glass or shaker
Squeeze the juice of half a lemon Into the shaker
Fill your shaker with cubed ice and seal
Shake vigorously for 10-15 seconds
Remove your glass from the freezer or empty it of ice
Double strain your cocktail into your chilled martini glass or coupette
Garnish with a mini paper plane pegged to the glass or a lemon twist
Serve and enjoy!

The Paper Plane was created in 2007 by the team behind former World’s Best Bar, Milk & Honey for the opening of their former colleagues’ new Chicago bar, The Violet Hour.
The drink is a riff on a Last Word which itself is a riff on a Corpse Reviver No.2, each of these cocktails is composed of four ingredients in equal measure–a base spirit, two modifying liqueurs and a citrus juice. The Paper Plane is named after MIA’s 2007 single Paper Planes which was a guilty pleasure of the creators’.
Our version replaces the usual Aperol with Select Aperitivo. The original Venetian spritz liqueur, Select contains similar notes to the famous aperitivo but boasts a higher ABV and a slightly dryer more rounded flavour profile.
20ml Buffalo Trace Bourbon
20ml Select Aperitivo
20ml Montenegro Amaro
½ Lemon, squeezed
