The original Bellini is made from white peach puree, mixed with Italian sparkling wine. The drink was created at Harry’s bar in Venice by Giuseppe Cipriani. Harry’s son, Arrigo, says his father was obsessed with peaches, which would have been abundant in Italy from June to September. The drink would have been a seasonal speciality at Harry’s. It wasn’t until an entrepreneurial French man developed a way of preserving peach puree that it became a year round favourite, eventually being available at Harry’s bar in New York.
Myths & Legends
Apparently the drink was named the Bellini because it reminded Giuseppe of the toga of a saint depicted in a painting by Venetian artist Giovanni Bellini.
The Italian location of Harry’s bar was declared a national landmark by the ministry for cultural affairs in 2001.
With its light sweetness and fruity base, alcohol-free versions of the Bellini, often called Baby Bellinis, are a common and widespread drink.

Ingredients & Equipment
The Bambini Bellini works best when made using fresh lime juice and high quality peach puree. Funkin do a fantastic range of fresh fruit purees that are specially designed for use in cocktails.
- 35ml Cranberry Juice
- 25ml Lime Juice
- 12.5ml Peach Puree
- Splash of Lemonade
- Garnish With a Lime Wedge
- Hawthorne Strainer
- Mexican Elbow
- High-Ball glass
- Cubed Ice
- Take your Boston glass or small tin
- Using your jigger to measure add the cranberry juice and peach puree to the shaker
- Using your Mexican elbow and your jigger to measure, squeeze 25ml of lime juice and add it to the shaker
- Fill your shaker with cubed ice and seal with your Boston tin or lid
- Shake vigorously for 10-15 seconds or until your tin is very cold
- Using your Hawthorne strainer, strain your cocktail into your high-ball glass
- Fill the glass with cubed ice
- Top with a generous splash of lemonade
- Garnish with a lime wedge
- Serve and enjoy!
