Rhubarb Collins

Our Rhubarb Collins is a light, refreshing and beautifully simple fizz. This drink showcases the best of summery British flavours, using floral, London dry gin and sharp, fruity rhubarb syrup effortlessly paired with Umbrella Brewing’s crisp rhubarb cider.

Method

In a tall glass/high ball using a jigger to measure, add the gin and rhubarb syrup.

Fill glass with cubed ice.

Fill to top with Umbrella Rhubarb Cider and lightly stir.

Garnish with a lemon wedge.

Serve and enjoy!

History

Umbrella Brewing have gone from strength to strength with their range of alcoholic ginger beers and ciders. This most recent addition to their roster, their Rhubarb cider, is a deliciously balanced blend of sweet, tangy apple and dry, sour rhubarb. It is, of course, delightful on its own, but its light sparkle and clean taste make it the perfect mixer for this sumptuous summer high ball.

This perfectly honed concoction is a deliciously light and elegant cocktail and a sure-fire hit at any bar hire. The Tom Collins is the original fizz and in fact, the glass most often used for fizzes, the high-ball takes its other name from the Tom Collins drink, often being referred to as a ‘Collins glass.’

Fizzes like the Rhubarb Collins are a great way to balance out a menu populated by short strong cocktails, like a classics selection or a sours menu. Because of the added cider, this fizz is a long and refreshing way of drinking making it perfect for long parties or hot summer days.

Many sours can be converted into fizzes with the simple addition of soda water, so if you’re already thinking of serving drinks like The Empress; a lychee and elderflower flavoured vodka sour, or the Daiquiri; a classic rum and lime sour, offering fizz-styled alternatives is an easy and effective way to please guests who prefer their cocktails on the lighter side.
