How to make ...

Alcohol-Free Bakewell Fizz

This drink was designed with fun in mind. We love a strong booze-forward cocktail as much as the next bartender but that doesn’t mean we don’t like to have a little bit of whimsy in our mixology sometimes as well.

Method

In a Boston glass or shaker, using a jigger to measure, combine the Amaretti, cherry syrup, lemon juice and cranberry.

Fill shaker with cubed ice and seal.

Shake vigorously for 12-15 seconds.

Add a small splash of cream soda to the bottom of a Collins glass or high ball.

Strain the rest of the drink over the cream soda.

Fill glass two thirds with cubed ice and top with crushed ice.

Garnish with a straw and a lemon wheel.

Serve and enjoy

Equipment

Shaker
Jigger/measure
Bar spoon
Elbow press
Hawthorne strainer
Cubed ice

History

With the help of Lyres, a burgeoning alcohol-free spirit and liqueur producer, we were able to create an alcohol-free version of this playful cocktail that can be enjoyed by everyone. Combining the delicious alcohol-free ‘amaretti’ with cherry syrup in place of cherry liqueur result is a drink that captures all the fun and frivolity of the original without any of the booze.

Hi guys, Matilde here. I am at Mixology’s flagship venue, TT Liquor in Shoreditch. Today, we’re going to show you how to make a non-alcoholic Bakewell fizz, a drink that was inspired by the Bakewell Tarts created in-house. We are using Lyre’s non-alcoholic Amaretti and a cherry syrup, to get that balance of almond and cherry just right. We hope you love it. The ingredients are in the description below, and here’s Kay to show us how it’s made.

Hi, guys. It’s Kay back here at TT Liquor. Today I’m going to be showing you how to make a really special non-alcoholic version of our Bakewell Fizz, which is a really delicious drink, whether it’s got alcohol in it or not.

Our Bakewell Fizz is a shaken cocktail. First thing I need is, of course, the bottom half of my shaker ready to put all the ingredients in. And the first thing I need for my alcohol free Bakewell Fizz is some alcohol free amaretto. So we’ve got this really beautiful Amaretti by Lyre’s, which is a really exciting producer of various kinds of non-alcoholic spirits. For this drink, I’m going to want 35ml of my alcohol free amaretto.

Next thing that I want in here is the cherry part of our Bakewell fizz, and for that I’m going to be using some cherry syrup. So I’ve got this lovely Monin cherry syrup, and this is very sweet, so I don’t want too much of it. I’m going to go with 10ml of my cherry syrup.

Next thing to go in here is going to be some cranberry juice. So we’ve obviously got some quite sweet ingredients, this is just going to help to dry our cocktail out a bit. So I’ve got this nice cranberry juice made by Pago, which make really good quality juices, perfect for use in cocktails. And I want 20ml of my cranberry juice.

All right, next thing going into my shaker is going to be some fresh lemon juice. I want about a shot of lemon juice, which should be about half a lemon.,and pop my lemon in there. And then we go, that brings us perfectly up to 25ml of our lemon juice, or one shot. Fill that shaker with some cubed ice. Pop my tin on top. And we give that nice shake for about 15 seconds like so.

So that’s the first part of my Bakewell Fizz done. So we’re serving this in a tall glass, a highball. I’ve got one of those here, and I’m going to put the fizz in the bottom before I add the rest of the drink. And the fizz in our Bakewell fizz, comes from some cream soda, keeping it retro. This works really well with the other flavours in this drink. And put a little splash of this in the bottom of my glass.

And then I’ll strain the rest of my Bakewell fizz over that soda, It’s got this beautiful pink colour. I’m going to fill this glass with some cubed ice and then I’m just going to top it with a little bit crushed (ice). And for a garnish, I’ll grab the other half of my lemon and just do myself a really nice lemon wheel. And we’ll pop that in there for our garnish. So that is our Bakewell fizz, ready to drink.
