Sage & Pineapple Margarita

This is our twist on the often abused original. The classic being bright, sharp, tangy and salty, this is a slightly fruitier, herbaceous version.  The Sage & Pineapple Margarita is a wonderful year round cocktail, it’s a party pleaser that will pair well with almost any other cocktail in the sour family.

Margaritas are one of the most notable and notorious members of the sour family. The humble mixture of sweet, grassy tequila, zesty, fresh lime juice and lightly spiced orange liqueur is a delicious drink that hides a devilish kick.

Our Sage & Pineapple Margarita adds tropical fruit flavours and subtle earthy notes to create a cocktail that tastes heavenly, but is far from angelic.

The classic sours are a great base to get creative with cocktails, which is exactly what we’ve done with this drink. The sage and pineapple in this Margarita give a whole new flavour profile to this well-known cocktail without sacrificing its distinctive character. If you’re planning on serving the Sage & Pineapple Margarita, you might want to think about featuring a classic Marg as well. The pared back, zesty original is a great choice for those guests who prefer a drier cocktail and is a good comparison to its fruity cousin.

Tequila isn’t just limited to Margaritas. If agave-based spirits are your thing, and you want to sample more of what it has to offer, there’s a ton of tasty tequila cocktails to choose from. The Buena Vida is a long, tiki-style tequila drink featuring pineapple, grapefruit and vanilla. This drink helps to highlight the natural sweetness of tequila and is particularly good with a reposado, or gold tequila. The other, often overlooked, tequila classic is the Paloma. This Mexican favourite is a little different outside of its homeland due to the limited availability of the specific grapefruit soda Mexicans use to make their version. By mixing pink grapefruit juice, soda water and a little sugar syrup, we can make a pretty good homage to the original Paloma, a fruity, floral, long tequila fizz, perfect to offset the short, sharp Margaritas.

History

The Margarita was created sometime around the 1930’s but nobody is quite sure where or quite sure when.

However, it has gone on to become a classic cocktail the world over with all sorts of weird and wonderful twists and created in many different forms. The base ingredients, however, should always be the same no matter what is added: tequila, orange curacao, lime and sugar.

Myths & Legends

According to cocktail historian David Wondrich, author of Imbibe!, the best guess is that the Margarita as we know and love it, evolved from a cocktail known as the “Daisy.” This mix of alcohol, citrus juice, and grenadine served over shaved ice, was popular during the 1930s and 40s.

There were gin Daisies and whiskey Daisies and, eventually, inevitably, tequila Daisies, the original recipe for which called for tequila, orange liqueur, lime juice, and a splash of soda. At some point, this Mexican-influenced Daisy became known by its Spanish name, Margarita, which means daisy. According to the Oxford English Dictionary, Margarita— meaning: “a cocktail made with tequila and citrus fruit juice”—first appeared in print in English in 1965, though other sources point out that margaritas were popping up in Jose Cuervo ads as early as 1945.

Nobody is entirely sure when the Margarita was first created, although we do know that various forms of it have been around since at least the early 1930’s – with it probably originating somewhere in America. With Mexico not having a huge cocktail culture it is unlikely the cocktail originated there, however, during prohibition, rich American socialites would often cross the border to Mexico to drink legally so it is possible that the cocktail was created by an American Bartender, in a bar filled with rich Americans, in a Mexican resort.

This being a house creation there isn’t much material to reference for a Sage and Pineapple Margarita, we spoke to Jake Rogers, our head bartender and the mind behind this recipe, to see if he could give us a little more back story:

“Tequila cocktails and Margaritas especially, are a great mix of sweet and savoury flavours – pineapple is a classic fruit to pair with tequila as it comes from the same part of the world and I think the sweet tang of the fruit lends itself really well to savoury pairings as well. Think about ham and pineapple, cheese and pineapple, pineapple and chilli. So I started experimenting with really earthy, savoury herbs to balance with that sweet pineapple and the citrusy tequila and the sage just worked perfectly.”

 

Ingredients & Equipment

We’d only ever recommend using a true 100% agave tequila here and your best bet is with Tapatio or Ocho Blanco.

Ingredients

  • 50ml Tequila
  • 25ml Lime Juice
  • 25ml Pineapple Juice
  • 12.5ml Sage Gomme
  • Lime Wedge for Garnish

Equipment

  • Shaker
  • Jigger/Measure
  • Hawthorne Strainer
  • Mexican Elbow
  • Rocks Glass
  • Cubed Ice
Method
  • Take your Boston glass or small tin
  • Using your jigger to measure, add the tequila, pineapple juice and sage gomme to the shaker
  • Using your Mexican elbow and a jigger to measure, squeeze 25ml of lime juice and add it to the shaker
  • Fill the shaker with cubed ice and seal using your Boston tin or lid
  • Shake vigorously for 10-15 seconds or until your tin is very cold
  • Fill your rocks glass with cubed ice
  • Using your Hawthorne strainer, strain your cocktail into the glass
  • Garnish with a lime wedge
  • Serve and enjoy!
